RAWAS AMBAT TIKHAT
Ingredients
250 grams Indian salmon (rawas), cut into medium pieces
4-5 kokum petals
4-5 dried red chillies + for garnishing
Salt to taste
¼ teaspoon turmeric powder
1 tablespoon ginger-garlic paste
½ cup fresh scraped coconut
4-5 black peppercorns
1 teaspoon coriander seeds
1 teaspoon minced garlic
2 tablespoons oil
1 medium onion, chopped
½ cup coconut milk
Method
1. Take fish in a bowl. Add salt, turmeric powder and ginger-garlic paste, mix well and set aside to marinate.
2. Grind together coconut, chillies, peppercorns, coriander seeds and garlic with little water into a fine paste.
3. Soak kokum in some water.
4. Heat oil in a non-stick pan, add onion and sauté till golden. Add prepared paste, mix well and sauté for a minute. Add some water, mix and bring to a boil.
5. Add marinated fish, mix lightly and cook for 2-3 minutes. Add coconut milk and stir to mix. Add kokum and simmer for 2-3 minutes.
6. Serve hot garnished with a dried chilli.
Preparation Time: 20-30 minutes
Cooking Time: 10-15 minutes
