QUESADILLA
Ingredients
4 leftover large rotis
½ cup leftover red kidney beans (rajma) masala
1 green capsicum
Readymade salsa for spreading and serving
50 grams processed cheese
Oil for greasing
Method
1. Cut capsicum into 1 inch thin pieces.
2. Spread some rajma masala on one side of each roti and salsa on top. Put some capsicum pieces and grate some cheese on top and fold into half moon shape.
3. Heat an electric griller and grease with some oil. Place the quesadillas one by one, cover and grill for 1-2 minutes or till the cheese melts.
4. Serve hot with salsa.
Preparation Time: 10-15 minutes
