FRENCH FRIES PEPPER SALT
Ingredients
3 cups French fries, frozen
Crushed black peppercorns to taste
Salt to taste
1 tablespoon oil + for deep-frying
2 spring onion bulbs
1 tablespoon chopped garlic
½ inch ginger, chopped
1 tablespoon chopped celery
1-2 green chillies, chopped
A pinch sugar
1 tablespoon crushed stock cubes
1 teaspoon soy sauce
1 tablespoon chopped spring onion greens
Method
1. Heat sufficient oil in a kadai. Deep-fry French fries till crisp. Drain on absorbent paper.
2. Chop spring onion bulbs.
3. Heat 1 tablespoon oil in a non-stick wok. Add chopped onions, garlic, ginger, celery and green chillies and sauté for a minute.
4. Add crushed peppercorns, salt, fries, sugar, crushed stock cubes and soy sauce and toss well.
5. Add spring onions greens, switch off heat and serve immediately.
