STIR FRIED BRINJALS
Ingredients
4-5 long brinjals
1 tablespoon oil + for deep-frying
2 tablespoons cornstarch
Salt to taste
Crushed black peppercorns to taste
2 tablespoons lemon juice
2 teaspoons red chilli flakes
1 tablespoon chopped garlic
2 tablespoons sweet chilli sauce
1 tablespoon tomato ketchup
1 teaspoon vinegar
1-2 stalks spring onion greens, finely chopped
Toasted sesame seeds for garnishing
Method
1. Heat sufficient oil in a pan.
2. Cut brinjals into medium strips and transfer into a bowl. Add cornstarch, salt, crushed peppercorns, 1 tablespoon lemon juice and 1 teaspoon chilli flakes and mix well.
3. Deep-fry brinjals into hot oil till golden and crisp. Drain on absorbent paper.
4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till golden. Add sweet chilli sauce and tomato ketchup and mix well.
5. Add remaining chilli flakes, salt, crushed peppercorns, remaining lemon juice and vinegar and mix well. Add brinjals and toss to mix. Switch off heat, add spring onion greens and toss to mix.
6. Serve hot garnished with some toasted sesame seeds.
Preparation Time: 5-8 minutes
Cooking Time: 10-12 minutes
