JOWAR AND ALMOND CHOCOLATE CUPCAKES
Ingredients
½ cup sorghum (jowar) flour
¼ cup almond flour
¼ + ⅛ cup cocoa powder
¼ + ⅛ cup butter
¾ cup fine brown sugar
¼ cup yogurt
¼ tsp baking soda
½ tsp baking powder
A pinch of salt
¼ tsp vanilla essence
3 tbsps milk
Buttercream frosting as required
Fresh strawberry wedges for garnish
Method
1. Preheat the oven at 180ºC.
2. Take butter in a large bowl. Beat with an electric beater till smooth.
3. Add fine brown sugar and continue to beat till the mixture turns light and fluffy. Add yogurt and beat till the sugar dissolves.
4. Sift sorghum flour flour cocoa powder baking powder baking soda salt directly into the bowl. Add vanilla essence and gently fold till a smooth batter is formed.
5. Stir in the milk to adjust consistency.
6. Transfer the mixture into individual cupcake liners lined in a cupcake mould. Place it in the preheated oven and bake for 15-20 minutes.
7. Bring the cupcakes out of the oven and allow to cool completely.
8. Arrange the cupcakes on a serving plate pipe out the buttercream frosting on each cupcake and serve garnished with strawberry wedges.
